The word “elaboration” acquires a fundamental sense in vitiviniculture and, especially in our winery, in which this artisan process and care in each one of its parts, determines the balance and harmony of the final product.
In our winery starts from the vineyard, which is controlled from the pruning and continues with each vegetative moment of the plant, when the physiological maturity is optimal begins the harvest, using scissors for that purpose.
The transport is carried out in trays of 18 kilos capacity.
Upon arriving at the winery, a meticulous selection of bunches is practiced before grinding.
The fermentation takes place in vessels of small capacity that simplifies and favors temperature control (it does not exceed 26 ° C). We appreciate great concentration of color and typical aromas of each varietal that will last over time.
Our laboratory is equipped to make the determinations that demand the process of elaboration, stabilization and conservation of our products. Finally they are parked in French and American oak.
